Cajun seasoning is the only blend of spices you should have in your pantry. This powerful blend of herbs, spices and other ingredients will give your food a new life whether you make it yourself or purchase it in the store. Cajun Potato salad is a great example. Try this super creamy, slightly spicy and flavorful potato salad if regular potato salads are a bit boring. You won't want it any other time.

What is Cajun Potato Salad?

This is not a traditional Cajun dish. It's a potato salad that has been seasoned with Cajun seasoning to add a spicy, smoky and herb-filled flavor. To really bring it to the next level, I added a lot of herbs and spices to the dressing. Also, I used spicy Creole Mustard and a few dashes of hot sauce. To keep the Cajun theme going, I added green onions and a handful chopped. This potato salad is bursting with flavor!

Use of potatoes

Normally, I prefer a waxy potatoes like Yukon Gold, red potatoes, or Yukon Gold for potato salads, but I used Russet potatoes, which are softer. The Russet potatoes break down and are half-mashed as they are mixed with the dressing. If you want to use Yukon Gold potatoes or red potatoes, cut them up into smaller pieces to get the best potato-dressing ratio.

Cajun Seasoning: Homemade vs. store-bought

For this potato salad I used my homemade Cajun seasoning, but you can use any store-bought Cajun spice blend if you do not have one. Check the label to see if it contains salt. If you are using a store-bought spice blend that does not have salt, add some to your recipe (1/2 to 3/4 teaspoons to the dressing).

What to serve with Cajun potato salad

It's the perfect accompaniment to BBQ meat or grilled meat. You can also take it to a potluck or summer BBQ. Serve this potato salad with Slow Cooker Pulled Pork and Red Beans & Rice, Roasted bratwurst stuffed with peppers and onions, Baked chicken drumsticks or Quick BBQ Chicken. Don't forget the Collard Greens!

Ingredients

Cajun Seasoning*

  • 1 tsp smoked paprika $0.10
  • 1/2 tsp dried thyme $0.05
  • 1/2 tsp dried oregano $0.05
  • 1/4 tsp garlic powder $0.02
  • 1/4 tsp onion powder $0.02
  • 3/4 tsp salt $0.04
  • 1/4 tsp freshly cracked black pepper $0.02
  • 1/4 tsp cayenne pepper $0.02

Potato Salad

  • 2.5 lbs. russet potatoes $1.90
  • 1 tsp salt (for cooking water) $0.05
  • 2 large hard boiled eggs $0.42
  • 2 stalks celery $0.47
  • 3 green onions $0.33
  • 1/4 cup chopped parsley $0.20
  • 1 cup mayonnaise $1.22
  • 2 Tbsp Creole mustard (or spicy brown mustard) $0.15
  • 1 Tbsp red wine vinegar $0.13
  • 1/2 tsp hot sauce $0.02
  • 1/4 tsp sugar $0.01

Instructions

  • Mix the herbs and spices to make the Cajun seasoning.
  • Peel the potatoes and dice them into 1/2-inch pieces. Sprinkle 1 teaspoon of salt on top and then cover the potatoes with water.
  • Put the lid on and bring to a rolling boil over medium heat. Reduce the heat and continue boiling the potatoes for 8 minutes (test with a fork). Drain the potatoes and rinse them briefly in cool water.
  • Prepare the potato salad while the potatoes are boiling. This will give the flavors time to combine. Stir together the mustard, hot sauce (or sugar), red wine vinegar and Cajun seasoning in a large bowl. Set aside the dressing.
  • Finely dice celery and green onions. Chop parsley.
  • Transfer the potatoes to a large mixing bowl along with celery, green onions, and parsley once they are mostly cooled. Pour the dressing on top and stir everything until well combined. Taste the potato salad and adjust salt or seasonings according to your taste. Serve warm or chilled until ready to consume.

Notes

You can substitute 1 Tbsp of store-bought Cajun Seasoning for the homemade Cajun Seasoning. Check if your seasoning has salt. If not, add some salt to your potato salad dressing.

Cajun Potato Salad: Step-by-Step Photos

Peel and dice 2.5 pounds. Cut russet potatoes in 1/2-inch chunks. Sprinkle 1 tsp of salt on top of the potatoes. Cover the potatoes in water, cover the pot with a lid, and bring them to a rolling boil on medium heat. After the potatoes have boiled, reduce the heat slightly and continue boiling the potatoes for 8 minutes or until they are very soft (test the potato with a knife-it should easily pierce). Drain the potatoes and rinse them briefly in cool water.

Cajun seasoning is made by combining 1 tsp of smoked paprika with 1/2 tsp dry thyme and 1/2 tsp oregano. Also, add 1/4 tsp of garlic powder, 1/4 teaspoons onion powder, 1/8 teaspoons cayenne, 1/4 teaspoons freshly cracked pepper and 3/4 teaspoons salt.

Prepare the potato salad while the potatoes are boiling. This will allow the flavors to blend. Add 1 cup of mayonnaise to the Cajun seasoning mix, 2 tablespoons of Creole mustard and 1 tablespoon red wine vinegar.

Mix the ingredients for the dressing until they are smooth. Set aside the dressing.

Hard boil two eggs. You can use the traditional method of hard boiling eggs or I prefer to use my soft-boiled method. Increase the simmering time to 12 mins. The eggs should be cooled, and then chopped into small pieces.

Slice three green onions and roughly chop two stalks celery.

Add celery, parsley, celery and eggs to a large serving bowl. Pour the dressing on top.

Stir everything until it is coated with the dressing and evenly mixed. Taste the potato salad and adjust salt, hot sauce or other seasonings according to your taste.
